Each and every single estate or blended shipment is cupped against
library standards for continuing quality and consistency.
Pat, David, Donna, John, Virginia and Lisa are just a few folks that
make up over 100 cumulative years of tea tasting & processing experience inside
the Beverage House blending area that taste and test the attributes of teas each day.
The tea is measured, generally 3 grams into the cup lid for inspection.
A visual check of quality, color, aroma, foreign material is documented.
The tea is then placed into the infusion cup as the water heats.
Proper temperature water, generally 170 F is added.
The infusion phase is timed carefully for optimum extraction.
The infusion is drained after specific time.
The tea is judged for color, aroma, character, astringency and overall cup quality.
Beverage House has developed a standard for in house cupping.
